Easy Mexican Recipe for Dia del Niño: Left-over BBQ Enchiladas

Dia del Niño, or Day of the Child, is a festive holiday celebrated across Mexico and many Latin American countries to honour and appreciate children. Growing up, I remember my cousins in Honduras would always ask me what I got for Dia del Niño, as it is custom that children receive regalos como en Navidad or similar to their birthday. Dia del Niño is a lively celebration which more than often includes a piñata, cake, presents y comida y refrescos tipicos de el pais. But, since I didn’t grow up in Honduras, my family didn’t celebrate Dia del Niño… and I always felt like I was left out, hahaha. I mean who doesn’t like a party with delicious food and games?

So, now that I have a child of my own, I am determined to celebrate Dia del Niño, especially since she is Half Mexican/ Half Honduran. Our plan is for her to have a couple of pen-pals via SNAIL MAIL and see how other children celebrate Children’s Day in their country or even family.

We will also make a traditional dish, as a family. It’s important to include your child in food prep/cooking, so they can get their hands dirty and have some fun cooking as a family. Some of my favourite childhood memories are of grocery shopping and helping my parents prep/cook, they inspired the chef in us from a young age. And we want to continue that tradition with Little Moon 🙂 It’s a great way to show her how to use her senses (taste, smell, touch, sight…).

A favourite (and easy) dish to prepare are BBQ Left-over enchiladas, an easy Mexican recipe. For the stuffing of the enchiladas, I used our left-over rice and meat from the BBQ the night before). First, I sauteed onions, cilantro and mushrooms in a skillet. Then, I added the meat (chicken , which I shredded off bone and beef that I minced up), stir. Add in the rice, a can of black beans and a cup of  delicious  sauce. Simmer.

Throw in 6 tortillas into the microwave and heat em up for 30 seconds, then grab a tortilla…and grab a couple cucharadas of the enchilada filling and colocar right down the middle of tortilla. Then you wrap that bad boy up and place into an oven dish and repeat until all of your tortillas are stuffed.

Now comes my favourite part, DROWN the enchiladas in the mouth-watering Herdez® Salsa Verde. Just thinking of this salsa is making me drool, for reals. Top off with shredded cheese and cover with aluminum foil. Pop into over for 15 minutes.

Can’t forget about the creamy  avocado sauce to lather your enchiladas in. Super easy to make. In a bowl, mash a whole avocado and add Herdez® Salsa Verdad and mix. Yummm.

SNICKERS® When I’m Hungry

I am a HUGE fan of the hilarious “You’re not you when you’re hungry” SNICKERS® commercials. You know, the ones where someone is not acting like themselves. My favorite  SNICKERS® commercial happens to be the one where Marcia Brady is acting a little hostile and aggressive (not like herself) and we see her as Danny Trejo (whose characters are hostile/agressive) until she has a  SNICKERS® and is “back to normal” acting like herself.

You can relate, right? I mean who hasn’t had one of those moments when you are NOT feeling or acting like yourself?

I know I have. Being a new mom, sometimes I feel like a zombie! You know those days where you’ve barely slept, haven’t been able to sit down for a meal and just about EVERYTHING irritates you? UGH! Well, I’ve realized that I am not me when I’m hungry. I don’t like being snarky, hostile or rude, but it happens when hunger gets the best of me, and sometimes somethings as small as a SNICKERS® bar makes me fell ME again, happy-go-lucky!

So, it’s important that even when I don’t have time to eat a meal, I have to grab something that will satisfy my hunger, like a  SNICKERS® bar. It’s just something about SNICKERS® milk chocolate and nuts that keeps the hunger at bay and the crazy away! Jajaja, and I don’t have to worry about not acting like myself.SNICKERS-keephungeratbayandcrazyaway-whenimhungry-cbias-AD-711

Personally, I like to keep  delicious treats like  SNICKERS® Peanut Butter Squares in different places like diaper bag, purse, car, stroller caddy because you never know where hunger will creep up on you. And lets face it, we want to keep the cray away, for everyone’s sake.

We usually pick up our SNICKERS® bars from our local 7-11. They are in the candy/chocolate aisle.

Tips for staying healthy

So many things change when you become a parent, for the better.  When I found out I was pregnant with our Little Moon I decided that I wanted be the “BEST” version of me. That meant everything from expressing myself creatively, learning something new and to ultimately develop and maintain healthy habbits. Not only for me, but for my now expanding family.

The last one, developing and maintaining healthy habbits is especially important because as a parent, your child picks up everything from you. Children are always watching and learning, that’s why it is important for parents to establish healthy routines, including physical activities and healthy eating habbits. So as a parent, you have to lead by example.

Being healthy is a lifestyle, it is a commitment that will benefit not only yourself, but everyone around you. As I mentioned before, I started focusing on my health habbits during pregnancy because I knew once my baby was born, it would be a lifestyle.  So I’ve been on this healthy lifestyle for about a year and a bit now, and I have really enjoyed  the process and am happy that I started when I did.

And now that Lunita is growing, I notice that she is getting used to some of our healthy routines, which includes,going for walks and eating veggies and fruit. Below are some of my tips to help you keep your family healthy:

  1. Healthy Eating:
  • Don’t skip meals. Always eat breakfast.
  • Snacks:  I enjoy simple snack, like hard boiled eggs with a plate of veggies and fresh fruit with a side of hummus.
  • Smoothies: You can throw in veggies/fruit, oatmeal, chia seeds.

2. Water: Drink up to 8 glasses of water a day. I have a tall glass of water in the morning, in between meals and one before bed. It helps that            in my home I don’t buy juice or soda.

3. Physical Activity: Do something you enjoy. You don’t have to go to the gym, you can go for a bike ride, or simply go for a nice walk around                   the neighborhood.

Starting a healthy routine is easy, keeping it may be another story. But take it one day at a time and make the effort for you and your family, it’s one of the most important things you can do.

Hi NOTM readers! It’s Jessika writing in from Los Angeles, recovering from a hectic but wonderful holiday season. I can’t help but feel like I got hit by the Christmas train this time around. I’m sure that first time moms can relate but I had so much expectation for Nina Rose’s first Christmas that I may have run myself a little ragged in the process (We made tamales twice in one week!). At 10 months old she had no idea what was going on, but she really liked the wrapping paper! As 2014 came to a close I found myself reflecting on the most amazing year of my life (a wedding and a baby!) and the many lessons I’ve learned along the way. I’m sure that most parents would agree that the first year of parenting is so full of personal growth & probably growing pains if we are honest with each other.

I never knew how strong I could be and that’s why I am so excited for the New Year and making some really well thought out and ambitious new years resolutions. I have struggled with my weight my entire life and have only recently learned to accept and appreciate my curvy Latina figure (another thing I can thank motherhood for!) and stop struggling against it. Every single resolution I’ve ever made has been “I’m going to get skinny!” or “I’m going to loose this many pounds…or else!” But this time I am resolving to not make those types of resolutions. Because I’m resolving that in 2015 I am going to take better care of myself. I really want to be the best example for my daughter as I can be, and to me that means not focusing on a number on a scale but making the right choices. Taking care of myself physically, mentally, and emotionally.

Part of this resolution for me means eating a breakfast. I’ve always been bad about it. And when I do want to eat breakfast I want chilaquiles, tortilla con huevo, or a nice burrito with chorizo con papa… see my problem? Latin food is just so good! So I decided to take a bowl of avena and make it a fun breakfast for kids and parents. We spend the holidays with my parents in the suburbs and whenever I’m out there I love shopping at big stores! It’s something you don’t have access to when you live in the city and I miss it sometimes from my childhood. So with the baby asleep my Mom and I made a <Wal-Mart run. While we were there I picked up all my ingredients for my Quaker® Life Chia Fruit Bowl and a couple other items for easy baby friendly breakfasts while you are away from home. I grabbed a box of the Quaker® Squares and Quaker® Simply Granola so that I can throw them in the diaper bag for an easy snack while we run around town and also a Quaker® Real Medley. We loved the Quaker® Real Medley, I added milk instead of water and Nina Rose ate the entire container. I actually thought we would share but she didn’t give me a chance!IMG_3332 IMG_3336

This Quaker® Life Chia Fruit Bowl recipe is really great when you have kids who are old enough to help in the kitchen or who are crafty as it’s half recipe and half art project. Nina Rose and I both ate this for breakfast and we were ready to go and full of energy for a day at Coldwater Canyon Park in Beverly Hills. This is so easy to pack for on the go meals or as a busy project that they can eat! There are so many variations depending on the season, your mood, or just your favorites. I would love to see some of your creations and ideas to keep this recipe interesting and in your regular rotation!

Quaker Life Chia Fruit Bowl

Chia Seeds 4 Tablespoons

Organic Milk or Milk Substitute 1/3 cup

Greek Yogurt (Full Fat) 1/3 cup

Quaker Life Cereal ½ cup

Quaker oatmeal (I used orginal) 1/3 cup

Kiwi

Pineapple

Pomegranate

Banana

Shredded Coconut

Mexican Cinnamon dash

Lechera 1 teaspoon

The night before mix chia, milk, yogurt, and oatmeal, cinnamon, and lechera in a bowl. Cover and refridgerate over night .

 

Dice fruit and decorate your bowl however you like!

 

That’s it! So easy and really delicious!

Silk Creamy Cashew

Gabriel and I are both lactose-intolerant, so we are always on the look out for tasty milk alternatives. The newest milk substitutions that we have tried is Silk’s NEW Creamy Cashew. The name really says it all, it’s irresistibly creamy and delicious. Silk Creamy Cashew is really made of creamy cashews, no artificial flavours or colours here.

One of the main facts that caught my attention is that Silk Creamy Cashew has NO GMOs, as Silk is part of the NON GMO Project. In addition to being dairy and gluten free, Creamy Cashew is also SOY-FREE, which is great because about 93% of US soybeans are genetically modified. However, since Silk is part of the NON GMO Project, they only use non-GE soybeans in their other products.

Quick + Healthy Snacks with Lifeway Kefir

I’ve always had a healthy lifestyle, I eat a balanced diet and get a little bit of exercise in here and there. But sometimes life can get so busy that we forget to eat, which is no good! Everyday life stressors also have an impact on our health as well, so it’s important to make sure that we atleast have some healthy snacks in our home.
And that’s where Kefir comes in- a smooth, tart and refreshing cousin of yogurt. I first heard of Kefir a year ago while researching for creamy dairy beverages that were lactose free since I am lactose intolerant. I was a bit hesitant to try kefir at first because the smell is a bit tart, but after the first gulp I was addicted, I was pouring it into everything.
Now it was time to let  Gabriel have a try. I just poured it into a glass and served it to him, I just said it was a smoothie and he drank it right up. When I told him that it was kefir, he was like “QUE es ESO?” y le dije “Kefir is related to yogurt, but it’s way better because it’s more than 90 % lactose free, so it wont hurt us.”
He was estatic since he is also lactose intolerant. Kefir is also great because it is rich in protein, Lifeway Kefir contains 7g of protein per 3/4 cup (175 mL) and contains 12 live and active Probiotic cultures that support the immune system and balance digestive health.
That’s why when I saw that #CollectiveBias had this campaign with Lifeway Kefir I jumped at the chance to share my experience with you guys.
We had only tried the “Original” Kefir  flavour before, so this time around we picked up a bottle of Peach and Strawberry flavour from Safeway, in the dairy aisle. Kefir is indeed a great alternative for milk! It’s just as good or even better than milk because of all the health benefits and it can be enjoyed in a varierty of ways. Lately, I’ve been obsessed with the “overnight oats” for breakfast! Super easy breakfast, especially for new moms like me, who can’t seem to get enough time to cook a good hearty breakfast, let alone have a hot cup of coffee.

Like I mentioned before, this is currently my go-to breakfast. It take less than 5 minutes to prepare and is ready to eat in the morning for breakfast. I usually make 5 at a time. Follow the easy steps below to make your own overnight oats using Lifeway Kefir.
  1. Grab a mason jar
  2. First place oats in the jar, as much as you want
  3. Add fresh fruit
  4. Top up with Lifeway Kefir
  5. Add seeds
  6. Close with lid and shake
  7. Store in fridge.
Here are some more of my favorite ways of drinking/eating kefir:

Alone: Simply pour into cup and serve with a straw.
Smoothie: With the strawberry and peach flavour , I just pour into blender and add ice. For the “Original” flavour I like to add fruit or seeds.
Over Fruit: Cut up some fresh fruit, place in bowl and pour kefir on top.
With Cereal/Granola: Pour kefir over cereal/granola
Freeze as Popsicles: Pour kefir into popsicle container and freeze over night.
Instead of milk/water for pancakes.
As a substitute for milk in baking

Un plato tipico de Honduras: Pescado Frito en el Lago de Yojoa, Honduras // A typical dish from Honduras: Fried Fish from Lake Yojoa

Una de mis comidas favoritas de la cocina Catracha (Honduras) es un plato tipico: pescado frito. Para mi es casi mandatorio ir al Lago de Yojoa solo para comerme un pescado frito, que viene de ese mismo lago.

En general, los restaurantes que estan al rededor de el Lago de Yojoa te dejan escojer el pescado que quieres freir. Casi siempre voy por uno mediano y que este gordito. Jejeje.

El tipico plato de pescado frito viene con tajaditas, tortillas, arroz con frijoles (conocido como “casamiento”). Y tambien le puedes agregar as much or as little curtido. Y me gusta tener una cervezita Nacional de Honduras al lado. Apoco no se te antojo??

How to Make a Rainbow Salad [Recipe]

This is one of our signature year round salads. It goes great with any kind of dressing, freshly squeezed lemon juice or balsamic vinegar.I like the way it ALWAYS brightens up a plate with the beautiful array of colours. It’s always a part of our Thanksgiving and Christmas meal too.

Use your discretion for how much (or little) you use of each item.
You will need:

  • Romaine Lettuce
  • Spinach
  • Tomato
  • Dried Cranberries
  • Walnuts 
  • Yellow Peppers 
  • Carrots (shredded)
  • Cucumber
You can also top with your choice of dressing. I personally like any kind of vinaigrette. Let me know what you think.

Los Alteños in Guadalajara, Mexico

By now I am sure you are very aware of my love for tacos. Los Alteños is one of the tacos spots I regularly frequent when I am visiting Guadalajara, Mexico. You bet they always have a good variety of fresh salsitas, from the pico de gallo, to salsa roja and verde and my ULTIMATE FAVORITE salsa de aguacate! Yum, my mouth is watering…ahaha

At  Los Alteños they serve the most common kinds of tacos; pastor, bistec, chorizo, mixto, cabeza, carnaza, lengua (cow tongue) and sesos (cow brain). You can also choose to eat some vampiros/volcanes and gringas. 
It seems like every time I visit Los Alteños I get a minimum of 4 tacos de bistec. I like that the guys at Los Alteños are generous with the meat portion because I can make 4 tacos into  8 little tacos and add as much salsas as I want, without them looking like mountains hahaha. Tacos range in price from $8 MXP (about 60 cents) and $12 MXP (about 90 cents), VERY affordable!

To drink they offer  juice, milkshakes and aguas frescas in many flavours in a small (1/2L) or large (1L) option. I have personally only tried their lima and horchata aguas frescas which were refreshing and light.

They also offer a couple of dessert items, none of which I have tried yet because I am always to full of tacos, hahaha. Maybe next time? If you are ever in Guadalajara, Mexico you should definitely visit Los Alteños. They are open Sunday to Thursday 10am- 1am, and Friday/Saturday 10am- 2am.

Carnitas Loros Ferr 1 in Mexico City, Mexico

Before heading into Diego Rivera’s Museum, Anahucalli, Gabriel and I asked some of the locals where we could find some GREAT tacos. The majority suggested we try Carnitas Loros Ferr 1 down the street.

Whenever we are in Mexico, Gabriel has to have tacos de buche, so he was thrilled to see that they were offered at Loros Ferr 1. You can just see how pleased Gabriel was with the arrival of his delicious tacos de buche. And just incase you were wondering, buche is “pork stomach.” Good buche is tender and only slightly chewy, which this was! 
I went for the typical tacos de carnitas and they were delicious! Of course, I added my favorite taco toppings of pico de gallo, salsa de aguacate and freshly squeezed lemon. Oh yes, the tortillas were freshly HAND-MADE!!!! 

The service at Carnitas Loros Ferr 1 was great, staff was courteous and food was delivered quickly.
